Every Scotch Bonnet used in our chilli mash starts from our carefully selected seeds, cultivated on our own farms under strict sustainable practices. We oversee the entire journey, from planting to harvest, ensuring only the ripest, most flavourful chillies make it into our mash.

Once harvested, our chillies are expertly mashed and naturally lacto-fermented to enhance their depth of flavour. The process creates a rich, tangy, and umami-packed chilli paste. Finally, we pasteurise the mash to maintain its bold taste while making it shelf-stable—without the need for artificial preservatives.
