Gusa Hidalgo Serrano Chilli Mash is a refined evolution of our chilli purees—cleaner, fresher, and more sustainably made. Crafted from 95% fresh Hidalgo Serrano chillies and 5% salt, it’s naturally fermented at source in Rwanda, with no vinegar or artificial preservatives.
Mashed on the day of harvest and slowly fermented to develop its depth, Gusa offers a crisp, green brightness, subtle earthiness, and balanced, medium heat—true to the Hidalgo Serrano’s classic profile.
