Chilli Mash Company is a UK-based, multi-award-winning producer of artisanal chilli products, including purees, mashes, condiments, salts, oils, jams, and sauces. They manage a fully vertical supply chain from Rwandan farms to their manufacturing facility in Portsmouth, UK.

What is chilli mash?

Q1: Is chilli mash mashed potato?
A: No, despite the name, chilli mash isn’t mashed potatoes! It’s made purely from chillies—typically fresh peppers crushed into a chunky or paste-like texture.

Q2: What ingredients are used?
A: High-quality chilli mash is simply:
• Fresh chillies (around 85–90 % of the mash)
• Salt
• Sometimes a splash of vinegar, depending on the recipe
No added chemicals, artificial flavours, or preservatives.

Q3: How is it made?
A: The standard process:
1. Crush fresh chillies with salt
2. Ferment in barrels —this unlocks deep, complex flavours.
3. (Optional) Add vinegar or pasteurise for shelf stability.
We ferment at the source (e.g. Rwanda), then process and pasteurise in the UK.

Q4: What’s the difference between barrel fermented mash and brine mash?
A: • Mash style: chillies + salt, fermented in their own juices.
• Brine style: chillies + salt + water.
Both create acids naturally, but mash tends to be thicker and saltier, while brine is juicier.

Q5: Why use chilli mash?
It’s a versatile culinary powerhouse:
• Base for hot sauces, salsas, dips, marinades
• Stirred into soups, stews, vinaigrettes for instant heat
• Served as a spicy condiment or table sauce

Q6: How hot is chilli mash?
Heat varies by pepper type:
• Mild (like jalapeño, ~10,000 SHU)
• Medium (e.g., habanero, ~250,000 SHU)
• Extreme (e.g., Carolina Reaper or Scorpion, up to 2 million SHU)

Q7: How long does it last?
• Barrel fermented mashes tend to last months in the fridge.
• Pasteurised & bottled mash has long shelf life—up to 2 years sealed. Store in cool, dry place; refrigerate once opened.

What products do you offer?

Fresh Chillies: Grown mainly in Rwanda, available 365 days per year, ranging from mild to super-hot.

Chilli Mashes & Purees:
Made with just chilli, salt, and vinegar—no artificial additives

Condiments & Sauces: Over 50 flavour variations, including jams, salts, oils, and sauces. They also distribute Rwandan products like Akabanga

White Label Production: Custom-branded hot sauces from a range of over 100 recipes delivered quickly

Where are your chillies grown?

Most chillies are ethically grown on the company’s farm in Rwanda, with additional sourcing from other regions during off-season periods 

Where is your production based?

Manufacturing takes place at our factory in Portsmouth, Hampshire (Units 1 & 4 Hilsea Industrial Estate), where we produce purees, mashes, sauces, and condiments in-house.

Are your products ethical and sustainable?

Yes. We operate a fully traceable supply chain with direct sourcing, and utilise environmentally friendly production methods. All production in Portsmouth is done on renewable energy. We’ve also joined the UN Global Compact to reinforce our ethical commitment.

Do you make products that are vegan or vegetarian friendly?

All products produced by Chilli Mash Co. are vegan & vegetarian friendly.

Do you provide retail, wholesale & trade sales?

Absolutely. You can order wholesale directly via our website. We’re also available on Faire for trade buyers and supply a range of branded and private-label options

Can I order in retail quantities?
Yes! Both trade and retail customers can order directly. We operate a retail shop at our Portsmouth site, open Mon–Fri, 9:30 am–5:30 pm
